Crockpot Chicken Tacos

1. Place chicken breasts and sliced onion in the crockpot on low heat.
2. Season the chicken and onion with a homemade spice blend of chili powder, cumin, paprika, onion powder, garlic powder, salt, and pepper.
3. In a blender, add the entire can of chipotle chilies in adobo, the cubed pineapple, and the fresh orange juice. Blend until you have a rich, red sauce.
4. Pour the blended sauce over your seasoned chicken in the crockpot.
5. Cover and cook on low for 7-8 hours or until you can easily shred the chicken with a fork.
6. Shred the chicken and serve. Suggested toppings include sautéed onions and peppers, ripe avocado, and a spicy cashew cheese.
