The perfect salad for any occasion! This simple salad is super easy, uses fresh ingredients, and is extremely versatile. It can be topped with fish for a healthy lunch, served as a salsa with corn chips, or as a show-stopping side for any BBQ.
1. Clean corn by removing the outer husks and corn silk. Fold back over some of the inner husk to protect and steam the corn kernels while on the grill.
2. Prep all your other veggies (red onion, cucumber, cherry tomatoes, avocado, cilantro) and add them to your serving bowl or set them aside until ready to compile your salad.
3. Grill your corn over medium heat for 8-12 minutes, making a quarter turn every 2-3 minutes. Don’t worry if the husks char a bit; slight grill marks add a nice smokey, charred flavor to contrast your sweet corn.
4. Allow the grilled corn to cool for a few minutes before cutting the kernels from the cob.
5. Add all your prepped veggies and herbs to your serving dish. Dress with olive oil, lime juice, and lime zest. Season with salt and pepper to taste. Toss and adjust your seasoning as needed.
6. Serve as is, or top with added protein of choice! For preparing in advance, leave the avocado out to eliminate browning.
