Homemade Truffle Popcorn

On medium heat melt your coconut oil in a large pot, pour in your popcorn kernels and cover. Gently shake your pot to coat all kernels in the oil. They will start popping almost immediately. Keep covered and turn off your heat when you hear the “popping” start to slow down. This prevents burning, but still allows for the last few kernels to pop! Remove the cover and coat with a little olive oil or your favorite butter or butter replacement. Add seasonings of choice, shake and enjoy!!
