Melt in Your Mouth Pork Ribs (No Grill Required)
25 mins prepServes 4
Treat Dad this Father’s Day or literally any day with these melt in your mouth pork ribs. These ribs require no grill and are served with roasted potatoes and sautéed vegetables for a well-balanced meal.
Preheat your oven to 300F. Pat your pork ribs dry, then combine chili powder, kosher salt, garlic powder, onion powder, paprika, and black pepper to create a dry rub. Apply the combined spices on all sides of the ribs, massaging into the meat for maximum flavor. Optionally, cover one rack with BBQ sauce. Cover the ribs with foil and bake for 2.5 hours. At the 90-minute mark of baking, add your Idaho potatoes into the oven to ensure perfect cooking time. While the ribs and potatoes are cooking, in a separate pan, add your carrots, broccoli, and frozen peas along with vegan butter and sauté until tender. After 2.5 hours, remove the pork ribs from the oven and uncover them. Broil on high for 5 minutes to crisp up and caramelize the exterior of your ribs. Let the ribs rest for 10 minutes before cutting and enjoying with the baked potatoes and sautéed vegetables.
