Tropical Blended Overnight Oats

1. Combine 1 cup gluten-free rolled oats, 1 serving vanilla or unflavored protein, 1 serving collagen peptides, 1 cup fresh pineapple, 1/2 cup unsweetened coconut yogurt, 1/2 cup unsweetened full-fat coconut cream solids (plus some liquid for blending, or use coconut milk/milk of choice), 2 tbsp hemp seeds, and 2 tbsp chia seeds in a high-speed food processor.
2. Pulse all ingredients until blended. If the mixture is too thick, add a little extra coconut cream liquid (or your milk of choice) to aid blending. This extra liquid will also help the chia seeds expand overnight.
3. Layer the remaining 1 cup of fresh pineapple in your jar if desired.
4. Pour the blended oat mixture into a jar or container and refrigerate overnight.
5. In the morning, if the oats feel too dry, add a splash of milk, stir, and wait a few minutes until perfect.
6. If the oats have too much liquid, add a few more chia seeds, stir, and wait 5 minutes; they will help absorb the extra liquid.
