Veggie Fritters

Grate zucchini and carrot, then add them into a bowl with a pinch of salt. Let it sit for 20 minutes; the salt will pull out the moisture from the vegetables. Strain the vegetables with a cheesecloth or kitchen towel, removing as much water as possible. Add all ingredients into a bowl. Depending on how much moisture you have from your vegetables, you may need to adjust your almond flour by adding a tablespoon or more extra to help your fritters hold – use your judgment! Add olive oil into a large pan. Fry fritters for 2-3 minutes on medium heat or until golden and crispy. Cook on both sides!
