Warming Butternut Squash CURRY!
15 mins prepServes 4
This recipe was born out of a desire to transform roasted, puréed butternut squash and sweet potato into a baby-friendly curry. It's a warming, flavorful meal perfect for a cold, rainy day, suitable for the whole family, including babies 6+ months.
1. On medium-low heat, melt a tablespoon of coconut oil and sauté your minced garlic and grated ginger until fragrant (2-3 minutes).
2. Add the chopped onion and sauté until translucent.
3. Add the remaining spices (curry powder, cumin, turmeric) and allow them to bloom for 3-5 minutes or until fragrant.
4. Add the puréed butternut squash and sweet potato, and the full-fat coconut milk to the pot, then combine and bring to a soft simmer.
5. If desired, blend or use an immersion blender to create a smooth curry texture, especially for babies.
6. You can serve the curry as is or add an additional protein or vegetable. For example, cube 2 chicken breasts and sauté them separately in coconut oil with a pinch of curry powder, then add to the curry.
7. Cover and simmer on low heat until ready to serve.
8. Enjoy! Serve your curry on top of a white rice/quinoa blend with steamed broccoli.
